✨ Quick Recipe: Mediterranean Veggie Sauté with Pac Choi & Eggplant
Ingredients:
1 tbsp olive oil
1 eggplant, diced
1 squash, sliced
1 cup green beans, trimmed
1 pepper, chopped
1–2 tomatoes, diced
1 cup pac choi, chopped
Fresh herbs (parsley, basil, or oregano)
Salt & pepper to taste
Instructions:
Heat olive oil in a skillet over medium heat.
Add eggplant and squash; cook until golden, about 5 minutes.
Stir in peppers and green beans; sauté 4 minutes.
Add tomatoes and pac choi; cook until softened, about 3 minutes.
Season with salt, pepper, and fresh herbs.
