Quick Recipe: Garlic Veggie Stir-Fry with Pok Choi & Eggplant

Ingredients:

1 tbsp olive or sesame oil

  • 2 cloves garlic, minced

  • 1 eggplant, diced

  • 1 squash, sliced

  • 1 cup green beans, trimmed

  • 1–2 tomatoes, chopped

  • 1 cup pok choi, chopped

  • Fresh herbs (basil, parsley, or cilantro)

  • Salt & pepper to taste

Instructions:

  1. Heat oil in a skillet or wok over medium heat.

  2. Add garlic and cook until fragrant.

  3. Stir in eggplant and squash; cook for 5 minutes.

  4. Add green beans and tomatoes; cook another 3–4 minutes.

  5. Toss in pok choi and fresh herbs. Stir until wilted and bright.

  6. Season with salt and pepper.
