✨ Quick Recipe: Garlic Veggie Stir-Fry with Pok Choi & Eggplant
Ingredients:
1 tbsp olive or sesame oil
2 cloves garlic, minced
1 eggplant, diced
1 squash, sliced
1 cup green beans, trimmed
1–2 tomatoes, chopped
1 cup pok choi, chopped
Fresh herbs (basil, parsley, or cilantro)
Salt & pepper to taste
Instructions:
Heat oil in a skillet or wok over medium heat.
Add garlic and cook until fragrant.
Stir in eggplant and squash; cook for 5 minutes.
Add green beans and tomatoes; cook another 3–4 minutes.
Toss in pok choi and fresh herbs. Stir until wilted and bright.
Season with salt and pepper.
