Quick Recipe: Summer Stir-Fry with Pac Choi & Okra

Ingredients:

  • 1 tbsp olive oil or sesame oil

  • 1 cup okra, sliced

  • 1 squash, diced

  • 1 pepper, chopped

  • 1 cup green beans, trimmed

  • 1–2 tomatoes, chopped

  • 1 cup pac choi, chopped

  • Salt, pepper, and herbs (basil, parsley, or cilantro)

Instructions:

  1. Heat oil in a large skillet or wok.

  2. Add okra and squash; cook 4–5 minutes until golden.
