Ingredients:
1 tbsp olive oil or sesame oil
1 cup okra, sliced
1 squash, diced
1 pepper, chopped
1 cup green beans, trimmed
1–2 tomatoes, chopped
1 cup pac choi, chopped
Salt, pepper, and herbs (basil, parsley, or cilantro)
Instructions:
Heat oil in a large skillet or wok.
Add okra and squash; cook 4–5 minutes until golden.
Stir in peppers and green beans; sauté 3–4 minutes.
