Quick Recipe: Summer Garden Stir-Fry

Ingredients:
1 tbsp olive oil (or sesame oil)
1 eggplant, diced
1 squash, sliced
1 cup green beans, trimmed
2 cloves garlic, minced
1–2 tomatoes, chopped
2 cups poc choi, chopped
Fresh herbs (basil, cilantro, or parsley)
1 tbsp soy sauce
1 tsp honey or maple syrup
1 tsp vinegar or lemon juice
Salt, pepper & chili flakes (optional)

Instructions:

  1. Heat oil in a large skillet or wok.

  2. Sauté eggplant and squash 4–5 minutes until tender.

  3. Add green beans and garlic; cook 3 minutes.

  4. Stir in tomatoes and poc choi; cook 2–3 minutes until just wilted.

  5. Toss with soy sauce, honey, and vinegar. Season to taste.

  6. Sprinkle with fresh herbs before serving.

🥘 Serve warm over rice, quinoa, or noodles.
