Quick Recipe: Summer Veggie Skillet with Kale & Fennel

Ingredients:

  • 1 tbsp olive oil

  • 1 fennel bulb, thinly sliced

  • 1 cup green beans, trimmed

  • 1 squash, sliced

  • 1–2 peppers, chopped

  • 1 tomato, chopped

  • 2 cups kale, chopped

  • Fresh herbs (basil, parsley, or dill)

  • Salt & pepper to taste

Instructions:

  1. Heat olive oil in a large skillet.
