Ingredients:
1 tbsp olive or sesame oil
2 cloves garlic, minced
2 cups diced potatoes (pre-cooked or parboiled)
1 cup chopped peppers
1 cup green beans, trimmed
1 tomato, chopped
1 cup chopped kale or poc choi
2 radishes, thinly sliced
Fresh herbs, salt & pepper to taste
Instructions:
Heat oil in a large skillet over medium heat.
Add garlic, potatoes, and peppers — cook 5–6 minutes.
Stir in green beans and tomatoes; cook another 3–4 minutes.
Add kale or poc choi, and cook until wilted.
Toss in radishes and herbs just before serving.
