This one-pot dish is perfect for a light dinner or a side with grilled meat or bread.
Ingredients:
1 tbsp olive oil
1 Onion, chopped
2 cloves Garlic, minced
2 Potatoes, diced
1 small Squash, sliced
1 cup Cabbage, chopped
2 Tomatoes, diced
1 tbsp fresh Herbs
Salt, pepper, and optional paprika or chili flakes
Instructions:
Heat oil in a large pot. Sauté onion and garlic until fragrant.
Add potatoes and cook for 5 minutes.
Add squash, cabbage, and tomatoes. Stir well.
Add herbs, season to taste, and cover. Simmer for 20–25 minutes until everything is tender.
