A simple skillet dish that celebrates your CSA veggies!

Ingredients:

  • 1 tbsp olive oil

  • 1 zucchini, sliced

  • 1 squash, sliced

  • 1 cup green beans, trimmed

  • 1 cup okra, sliced

  • 1 tomato, chopped

  • ½ cucumber, diced (add at the end for freshness)

  • 1 cup cabbage, shredded

  • Fresh herbs (basil, parsley, or dill), chopped

  • Salt & pepper to taste

Instructions:

  1. Heat olive oil in a large skillet.

  2. Add zucchini, squash, green beans, and okra. Cook 5–6 minutes until tender-crisp.

  3. Stir in cabbage and tomato; cook another 2–3 minutes.

  4. Remove from heat, toss with cucumber and herbs.

  5. Season with salt and pepper. Enjoy warm or chilled!
